Strawberry Ooey-Gooey Butter Bars
If you’ve experienced the Ooey-Gooey Butter Bar you will always remember it! The rich, melt-in-your-mouth deliciousness is absolute heaven! First served in St. Louis, Missouri in the 1930’s, then re-popularized by Paula Deen, the Ooey Gooey Butter Bar (or cake) is a quick, easy dessert that people really get excited about. Crowd pleaser? Understatement of the year. This recipe for Strawberry Ooey-Gooey Butter Bars is my warm-weather twist on the original.
Summer Simplicity
I will not apologize for using a boxed cake mix! It’s an essential ingredient in the original recipe and even though I tend toward from-scratch cooking, these bars are worth the exception! Besides, you need a little easy decadence once in a while, don’t you? The ingredient list is short and sweet, the prep is minimal. If you’re looking for a quick, simple dessert that’s guaranteed to please, this is it.
Well-Traveled
These bars are also perfectly packable and travel well. So low maintenance! Bring a batch to your next family cookout, neighborhood pool party, or church potluck and watch them disappear like magic! I’m imagining taking a couple on a sunset picnic by the lakeshore… maybe a simple meal of chicken salad, homemade potato chips, and basil lemonade, all topped off with a strawberry ooey-gooey butter bar for dessert! Wouldn’t that be summer perfection?

Strawberry Ooey-Gooey Butter Bars
Ingredients
Base
- 1 15 0z. box Strawberry Cake Mix
- 1 large Egg
- 1 stick Unsalted Butter, melted
Filling
- 8 oz. Cream Cheese, softened
- 2 large Eggs
- 3 1/2 cups Powdered Sugar
- 1 stick Unsalted Butter, melted and cooled
- 1 tsp Vanilla Extract
Instructions
- Preheat your oven to 350 degrees F. Line a 9×13" baking dish with parchment paper. With an electric hand mixer, combine base ingredients in a medium mixing bowl. Beat until a dough forms. Press dough evenly into the bottom of baking dish.
- In a fresh, medium-sized bowl beat cream cheese with electric hand mixer on medium speed until smooth. Add eggs and vanilla, then beat until incorporated. Add powdered sugar and beat again, thoroughly. Reduce mixer speed and slowly pour in melted butter. Pour this mixture on top of strawberry dough base and spread evenly.
- Bake for 40 minutes. Cool completely and lift parchment out of baking dish. Cut into 15 bars by pressing long knife in rows. Don't drag the knife! Keep in airtight container for up to a week, but they'll be gobbled up before then, guaranteed!
